When I juice wheatgrass I get foam. Isn't foam oxidation?

Not in this case.
Getting foam while juicing wheatgrass is just like creating bubbles in soapy water by briskly moving your hand back and forth. It is a physical change, not a chemical change. One of the constituents of wheatgrass is saponin, a natural sudsing agent.
