Raspberried Sauce
Whether you have red or black berries,
this sauce is what I call "yumicious" or outrageously
delicious. If you want to make this out of season, freeze the berries
and use more fresh bananas.
Raspberry Cream Soup
Cashews are great with orange juice
and make the creamiest texture. I love this soup on a warm day,
or as a dip for parties. Another fun idea is to serve it as a fondue
with the soup in the middle and the fruit arranged around it on
a platter.
Rawcous Apple Pie
Could anything be more basic than
apple pie? This one is so good, I know you will enjoy making it
for parties, holidays and whenever the mood strikes you.

Rockin' Rye Bread Sticks
The Crunch of a bread stick is a satisfying
sensation. These have both an outer crunch and the inner softness.
What a delight!
Royal Porridge
Oatmeal is such a treat on a cold
day. For a real trea, make a sweet almond milk, blending almonds
and water with dates and banana in a blender and pour this over
the porridge.
Russian Rye Crackers
The omega 3 and 6 oils in the flax,
plus the calcium and protein in the sunflower seeds makes them a
crunchy delight.
Simmering Summer Sauce
Simply Salsa
Often salsa in a restaurant can taste
as though it comes from a bottle. This recipe is the freshest, tastiest
salsa ever. The secret ingredient is tomatillos. They look like
little wrapped up green tomatoes. I enjoy eating the salsa over
raw corn fresh off the cob. I take the corn kernels off the cob,
flash them in a food processor. Then I warm them on the electric
skillet, season with a tad of oil and spices and add the salsa.
This is one of my favorite meals.
Snow Ball Cookies
The beauty these cookies is that they
can be made during any season. The dried fruit makes this a non-seasonal
free cookie. There are as many versions of this cookie as your imagination
can create.
Southwestern Guacamole
First let us set the record straight,
avocado has no cholesterol. It is rich in essential oils. and it
is 70% water, quite an unusual combination. This fat is more easily
digested, being unsaturated. Magnificent raw, in salads or in a
dip, it also makes a terrific facial.
Southwestern Patty
This recipe is a favorite when you
want to serve a patty that looks like meat but does not have any
of the problems associated with eating meat, like hormones or drugs
fed to the animals. Sunflower seeds and carrots are full of protein
(6 grams per tablespoon) and calcium.
Sparkling Blueberry Jello Sauce
When I first made it, I did not know
that the blueberries would turn into the consistency of a jello.
It wiggles and jiggles and tastes great.
Sprouted Nori Rolls
Nori, thin black sheets of seaweed
often used for sushi, is a rich source of calcium and iodine. This
dish can be served as an appetizer or as a meal on its own.
Steamy Basil Soup
As simple to make as it is delicious
to eat. Find different kinds of basil and experiment with their
flavors. There is a purple basil, a cinnamon basil, a green Italian
and a curly leafed basil. So you have a world of delightful choices.
Stephen's Apple Flaxed Dressing
This recipe idea was shared with me
by Stephen Case while we were working together in Vancouver, photographing
the recipes in this book. Siegfried added flax oil to the list of
ingredients, and this recipe is the result. Full of essential fatty
acids, flax oil is one of the healthiest oils for our bodies.
Strawberry Cream Pie
I love strawberry pie, and this one
is so much fun to prepare and decorate. We were visiting a friend
in Silver City and I made two of these pies. Both were gone before
the end of the evening. Even, the next door neighbor got in on the
action.
Stuffed Grape Leaves Roll
This raw version of stuffed grape
leaves is a winner. As an appetizer or main dish, it gets rave reviews.
Usually the leaves are stuffed with rice or meat, but in this recipe,
the oats and avocado make a rich and creamy filling that is both
healthy and satisfying.
Such a Sunny Rye Bread
I first made this sourdough-flavored
bread in Santa Monica for a dinner workshop. I let one loaf dry
in the sun and the other in the dehydrator. They both tasted lovely.
The one in the sun was moist like essene breads.
Such a Sweet Sauce
I first encountered this sauce during
a show I was doing with a raw food chef and good friend named Adia.
We were making an almond carrot loaf and this sauce went on top.
The sweetness from the dates is reminiscent of the tomato sauces
sweetened with sugar, but this is much more palatable.
Summer Sorbet
What could make a more tasty sorbet
than the summer fruits of mangoes and pineapple. I added bananas
to my recipe. Try making it either way and see which you enjoy.

offered by Dr. Gabriel Cousens, and I enjoy making it for friends,
especially at holiday time. I prepared it for one of my TV shows,
